Farmer’s Cheese Pancakes (Syrniki)

Ingredients
- 2 cups farmer's cheese
- 2 eggs
- 3 tablespoons sugar
- 2 tablespoons semolina
- 4 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- 2 tablespoons sour cream
- 1/4 cup raisins (optional)
- A pinch of salt
- 2 tablespoons oil + 2 tablespoons butter for frying
Instructions
- Prepare the Batter. In a large mixing bowl, combine the farmer's cheese, eggs, sugar, semolina, flour, vanilla extract, sour cream, raisins (if using), and salt. Mix well until all ingredients are thoroughly combined.
- Shape the Pancakes. Heat the oil and butter in a non-stick skillet over medium heat.
- Using a tablespoon, scoop out the batter and shape it into small patties about 3 inches in diameter and 1/2 inch thick.
