Ingredients
  

  • 2 cups farmer's cheese
  • 2 eggs
  • 3 tablespoons sugar
  • 2 tablespoons semolina
  • 4 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 2 tablespoons sour cream
  • 1/4 cup raisins (optional)
  • A pinch of salt
  • 2 tablespoons oil + 2 tablespoons butter for frying

Instructions
 

  • Prepare the Batter. In a large mixing bowl, combine the farmer's cheese, eggs, sugar, semolina, flour, vanilla extract, sour cream, raisins (if using), and salt. Mix well until all ingredients are thoroughly combined.
  • Shape the Pancakes. Heat the oil and butter in a non-stick skillet over medium heat.
  • Using a tablespoon, scoop out the batter and shape it into small patties about 3 inches in diameter and 1/2 inch thick.
  • Cook the Pancakes. Place the patties in the heated skillet and cook for about 3-4 minutes on each side, or until they are golden brown and crispy on the outside.
  • Serve. Serve the syrniki warm with sour cream, jam, fresh fruit, or a drizzle of honey. Dust with powdered sugar if desired.
