Prepare the Batter. In a large mixing bowl, combine the farmer's cheese, eggs, sugar, semolina, flour, vanilla extract, sour cream, raisins (if using), and salt. Mix well until all ingredients are thoroughly combined. Shape the Pancakes. Heat the oil and butter in a non-stick skillet over medium heat.
Using a tablespoon, scoop out the batter and shape it into small patties about 3 inches in diameter and 1/2 inch thick.
Cook the Pancakes. Place the patties in the heated skillet and cook for about 3-4 minutes on each side, or until they are golden brown and crispy on the outside.
Serve. Serve the syrniki warm with sour cream, jam, fresh fruit, or a drizzle of honey. Dust with powdered sugar if desired.
