Ingredients
  

For the paneer:

  • 450g paneer cheese, cut into 2cm cubes
  • 50g cornflour (cornstarch)
  • 1 tsp ground white pepper
  • 1/4 tsp salt
  • Oil for frying (vegetable oil is fine)

For the sauce:

  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 2 tsp white vinegar
  • 1 tsp sugar
  • 1 tbsp tomato ketchup
  • 1 tbsp green chili sauce
  • 2 tsp cornflour mixed with 2 tbsp water

For the stir-fry:

  • 3 tbsp oil
  • 8 cloves garlic, minced
  • 1 inch ginger, finely chopped
  • 2-3 green chilies, sliced
  • 1 large onion, cut into petals
  • 1 green bell pepper, sliced
  • 4 spring onions, sliced (whites and greens separated)

Instructions
 

  • Mix cornflour, white pepper, and salt in a bowl. Coat paneer cubes in this mixture.
  • Heat oil for deep frying. Fry paneer cubes until golden and crispy. Drain on paper towels.
  • In a small bowl, mix all sauce ingredients except the cornflour slurry. Set aside.
  • Heat 3 tbsp oil in a wok over high heat. Add garlic, ginger, and green chilies. Stir-fry for 30 seconds.
  • Add onion petals and bell pepper. Stir-fry for 2-3 minutes until slightly charred but still crisp.
  • Pour in the prepared sauce and bring to a simmer.
  • Add the cornflour slurry and stir until the sauce thickens.
  • Toss in the fried paneer cubes and spring onion whites. Stir to coat evenly with the sauce.
  • Cook for another 1-2 minutes until everything is hot and well combined.
  • Garnish with spring onion greens and serve hot.
  • Serve with fresh Naan (or garlic naan!) and a side of chips (masala or chilli chips also work well here!)
