Ingredients
  

  • 250g sharp cheddar cheese, grated
  • 100g Gruyère cheese, grated
  • 15g cornstarch
  • 240ml heavy cream
  • 120ml white wine
  • 30ml white wine vinegar
  • 50g unsalted butter
  • 100g onion, finely diced
  • 15g garlic, minced
  • 30g jalapeño peppers, seeds removed and finely diced
  • 5g smoked paprika
  • 2g cayenne pepper (optional, for extra heat)
  • 5g salt
  • 2g black pepper, freshly ground

Instructions
 

  • In a bowl, toss the grated cheddar and Gruyère cheeses with the cornstarch until evenly coated. Set aside.
  • In a medium saucepan, melt the butter over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
  • Add the minced garlic and diced jalapeño peppers. Cook for another 1-2 minutes until fragrant.
  • Pour in the white wine and white wine vinegar. Bring to a simmer and cook for 2-3 minutes to reduce slightly.
  • Lower the heat to medium-low and slowly stir in the heavy cream. Simmer gently for 5 minutes, stirring occasionally.
  • Gradually add the cheese mixture, stirring constantly until all the cheese is melted and the sauce is smooth.
  • Stir in the smoked paprika, cayenne pepper (if using), salt, and black pepper. Adjust seasoning to taste.
  • If the sauce is too thick, thin it with a little more cream or milk. If it's too thin, simmer for a few more minutes to reduce.
  • Keep warm over low heat, stirring occasionally, until ready to serve.
  • To serve, drizzle generously over grilled hot dogs in toasted buns. Garnish with extra jalapeños, crispy fried onions, or chopped fresh herbs if desired.
