It’s a simple yet delicious way to turn a casual meal into a gourmet experience.
Ingredients
- 250g sharp cheddar cheese, grated
- 100g Gruyère cheese, grated
- 15g cornstarch
- 240ml heavy cream
- 120ml white wine
- 30ml white wine vinegar
- 50g unsalted butter
- 100g onion, finely diced
- 15g garlic, minced
- 30g jalapeño peppers, seeds removed and finely diced
- 5g smoked paprika
- 2g cayenne pepper (optional, for extra heat)
- 5g salt
- 2g black pepper, freshly ground
Instructions
- In a bowl, toss the grated cheddar and Gruyère cheeses with the cornstarch until evenly coated. Set aside.
- In a medium saucepan, melt the butter over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
- Add the minced garlic and diced jalapeño peppers. Cook for another 1-2 minutes until fragrant.
- Pour in the white wine and white wine vinegar. Bring to a simmer and cook for 2-3 minutes to reduce slightly.
- Lower the heat to medium-low and slowly stir in the heavy cream. Simmer gently for 5 minutes, stirring occasionally.
- Gradually add the cheese mixture, stirring constantly until all the cheese is melted and the sauce is smooth.
- Stir in the smoked paprika, cayenne pepper (if using), salt, and black pepper. Adjust seasoning to taste.
- If the sauce is too thick, thin it with a little more cream or milk. If it's too thin, simmer for a few more minutes to reduce.
- Keep warm over low heat, stirring occasionally, until ready to serve.
- To serve, drizzle generously over grilled hot dogs in toasted buns. Garnish with extra jalapeños, crispy fried onions, or chopped fresh herbs if desired.
