  • 75g finely chopped red onion
  • 20g chopped fresh dill
  • 150g diced seedless cucumber
  • 10g Dijon mustard
  • 150g diced red bell pepper (about 1 medium pepper)
  • 1.5g salt, or to taste
  • 115g crumbled feta cheese
  • 75g extra-virgin olive oil
  • 850g cooked lentils (drained weight if using canned)
  • Freshly ground pepper, to taste

Instructions
 

  • Prepare the Dressing: In a small bowl, whisk together the lemon juice, chopped fresh dill, Dijon mustard, salt, and extra-virgin olive oil until well combined. Adjust seasoning with freshly ground pepper to taste.
