Ingredients
  

  • Cottage cheese: 340g
  • Eggs: Approximately 200g (4 large eggs; each large egg is roughly 50g)
  • Vanilla extract: 5g (
  • Granulated sugar: 25g
  • Baking powder: 12g 
  • All-purpose flour: 120g
  • Canola oil: 60g 

Instructions
 

Prepare the Batter:

  • In a large mixing bowl, add the ingredients in this order:
  • 340g cottage cheese
  • 200g eggs (4 large eggs)
  • 5g vanilla extract
  • 25g sugar
  • 12g baking powder
  • 120g flour

Preheat the Skillet:

  • Heat a skillet over medium heat.
  • Add a portion of the 60g canola oil to the skillet, just enough to lightly coat the bottom.

Cook the Pancakes:

  • Pour small portions of the batter onto the heated skillet to form pancakes.
  • Cook until golden brown on the bottom, then flip and cook the other side until also golden brown.
  • Add more oil to the skillet as needed between batches.

Serve

  • Serve the pancakes immediately while they're still hot and the cheese inside is melted.
  • Accompany with maple syrup or jam as desired.
