Ingredients
  

  • Cottage cheese: 340g
  • Eggs: Approximately 200g (4 large eggs; each large egg is roughly 50g)
  • Vanilla extract: 5g (
  • Granulated sugar: 25g
  • Baking powder: 12g 
  • All-purpose flour: 120g
  • Canola oil: 60g 

Method
 

Prepare the Batter:
  1. In a large mixing bowl, add the ingredients in this order:
  2. 340g cottage cheese
  3. 200g eggs (4 large eggs)
  4. 5g vanilla extract
  5. 25g sugar
  6. 12g baking powder
  7. 120g flour
Preheat the Skillet:
  1. Heat a skillet over medium heat.
  2. Add a portion of the 60g canola oil to the skillet, just enough to lightly coat the bottom.
Cook the Pancakes:
  1. Pour small portions of the batter onto the heated skillet to form pancakes.
  2. Cook until golden brown on the bottom, then flip and cook the other side until also golden brown.
  3. Add more oil to the skillet as needed between batches.
Serve
  1. Serve the pancakes immediately while they're still hot and the cheese inside is melted.
  2. Accompany with maple syrup or jam as desired.
