  • All-Purpose Flour: 1 1/2 cups
  • Baking Powder: 1 teaspoon

Instructions
 

  •  Preheat the Oven. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  •  Mix Wet Ingredients. In a large mixing bowl, combine the mashed bananas, cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Mix until well combined.
  • Combine Dry Ingredients. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).
  • Combine Mixtures. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix. If desired, fold in the chopped nuts or chocolate chips.
