Indian Pub Vegetarian Noodles offer a delicious fusion of Indian and Chinese flavors. Stir-fried noodles, vibrant vegetables, and bold spices come together in this easy-to-make recipe. It's a flavorful, wholesome option for vegetarians or anyone craving a spicy, satisfying noodle dish.
Ingredients
- 250g noodles (egg noodles or rice noodles)
- 2 tbsp vegetable oil
- 1 onion, thinly sliced
- 2 carrots, julienned
- 1 red bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 cups mixed vegetables (cabbage, green beans, or snow peas)
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1/2 tsp white pepper
- 1 tsp sesame oil
- 2 green onions, chopped
For the spice mix:
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
Instructions
- Cook noodles according to package instructions. Drain and set aside.
- Mix all spice mix ingredients in a small bowl.
- Heat oil in a wok or large pan over high heat. Add onions, carrots, and bell peppers. Stir-fry for 3-4 minutes.
- Add garlic and ginger, stir-fry for 30 seconds.
- Add mixed vegetables and stir-fry for 2-3 minutes.
- Add the spice mix and stir to coat the vegetables.
- Add cooked noodles, soy sauces, rice vinegar, sugar, and white pepper. Toss everything together.
- Stir-fry for 2-3 minutes until noodles are heated through and well combined with vegetables and sauce.
- Remove from heat, add sesame oil and green onions. Toss and serve hot.
