Indian desi pub vegetarian noodles recipe

Ingredients
  

  • 250g noodles (egg noodles or rice noodles)
  • 2 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 2 carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 cups mixed vegetables (cabbage, green beans, or snow peas)
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1/2 tsp white pepper
  • 1 tsp sesame oil
  • 2 green onions, chopped
For the spice mix:
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder

Method
 

  1. Cook noodles according to package instructions. Drain and set aside.
  2. Mix all spice mix ingredients in a small bowl.
  3. Heat oil in a wok or large pan over high heat. Add onions, carrots, and bell peppers. Stir-fry for 3-4 minutes.
  4. Add garlic and ginger, stir-fry for 30 seconds.
  5. Add mixed vegetables and stir-fry for 2-3 minutes.
  6. Add the spice mix and stir to coat the vegetables.
  7. Add cooked noodles, soy sauces, rice vinegar, sugar, and white pepper. Toss everything together.
  8. Stir-fry for 2-3 minutes until noodles are heated through and well combined with vegetables and sauce.
  9. Remove from heat, add sesame oil and green onions. Toss and serve hot.

Notes
