Ingredients
  

  • Brownie Layer: 150 grams unsalted butter
  • 200 grams dark chocolate (70% cocoa), chopped
  • 150 grams granulated sugar
  • 100 grams brown sugar
  • 3 large eggs (approximately 180 grams)
  • 1 teaspoon vanilla extract
  • 100 grams all-purpose flour
  • 30 grams cocoa powder
  • 1/2 teaspoon salt
  • Cheese Layer: 250 grams cream cheese, softened
  • 50 grams granulated sugar
  • 1 large egg (approximately 60 grams)
  • 1 teaspoon vanilla extract

Instructions
 

  • Prepare the Brownie Layer: Preheat your oven to 180°C (350°F). Line a 9×9-inch baking pan with parchment paper, leaving an overhang on the sides.
  • In a heatproof bowl, melt the butter and dark chocolate together over a pot of simmering water or in the microwave in short bursts, stirring frequently until smooth.
  • In a large bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla extract until thick and pale.
  • Add the melted chocolate mixture to the egg mixture and whisk until well combined.
  • Sift in the flour, cocoa powder, and salt, and fold gently until just combined. Be careful not to overmix.
  • Pour the brownie batter into the prepared baking pan and spread evenly.
  • Prepare the Cheese Layer: In a medium bowl, beat the cream cheese with the granulated sugar until smooth and creamy.
  • Add the egg and vanilla extract, and beat until fully incorporated.
  • Dollop the cheese mixture over the brownie batter in the pan. Use a knife or toothpick to swirl the cheese mixture into the brownie batter, creating a marbled effect.
  • Bake: Bake in the preheated oven for 25-30 minutes, or until the cheesecake layer is set and the edges are lightly golden.
  • Remove from the oven and let cool completely in the pan. Once cooled, refrigerate for at least 1 hour before slicing.
  •  Serve: Use the parchment paper overhang to lift the brownies out of the pan. Cut into squares and serve.
