Ingredients

  • 250 grams all-purpose flour
  • 250 grams cottage cheese, blended until smooth
  • 50 grams unsalted butter, chilled and cubed
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 large egg
  • 50 ml milk
  • 50 grams grated cheddar cheese (optional, for extra flavor)
  • 1 tablespoon chopped fresh chives or parsley (optional, for garnish)

Instructions

  • Preheat the Oven. Preheat your oven to 200°C (392°F). Line a baking sheet with parchment paper.
  • Prepare the Dough: In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar.
  • Add the chilled, cubed butter to the flour mixture. Use your fingers or a pastry cutter to rub the butter into the flour until the mixture resembles coarse crumbs.
  • Mix in Cottage Cheese: Add the blended cottage cheese to the flour mixture. Stir until just combined.
  • Add Wet Ingredients: In a separate bowl, whisk together the egg and milk. Pour the wet ingredients into the flour mixture. Stir gently until a dough forms. If desired, fold in the grated cheddar cheese for extra flavor.
  • Shape the Scones: Turn the dough out onto a lightly floured surface. Gently knead the dough a few times until it comes together. Pat the dough into a 2 cm thick round.
  • Use a round cutter or a glass to cut out scones from the dough. Place them on the prepared baking sheet.
  • Bake the Scones: Brush the tops of the scones with a little milk to help them brown.
  • Bake in the preheated oven for 15-20 minutes, or until the scones are golden brown and cooked through.
  •  Serve: Allow the scones to cool slightly on a wire rack.
  • Garnish with chopped fresh chives or parsley if desired.
  • Serve warm with butter or your favorite spread.
