Ingredients
  

  • 350 grams short pasta (such as penne or fusilli)
  • 300 grams broccoli, cut into small florets
  • 30 ml olive oil
  • 2 cloves garlic, minced
  • 200 ml heavy cream
  • 150 grams sharp cheddar cheese, grated
  • 50 grams Parmesan cheese, grated
  • Salt and freshly ground black pepper to taste
  • 10 grams fresh parsley, chopped (for garnish)

Instructions
 

  •  Cook the Pasta. Bring a large pot of salted water to a boil.
  • Add the pasta and cook according to package instructions until al dente.
  • About 2 minutes before the pasta is done, add the broccoli florets to the pot.
  • Reserve 120 ml of pasta cooking water, then drain the pasta and broccoli.
  •  Prepare the Sauce. In a large skillet, heat the olive oil over medium heat.
  • Add the minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the heavy cream and bring to a gentle simmer.
  • Combine Ingredients. Stir in the grated cheddar and Parmesan cheeses, mixing until the cheese is melted and the sauce is smooth.
  • Add the cooked pasta and broccoli to the skillet, tossing to coat in the sauce.
  • If the sauce is too thick, add a bit of the reserved pasta water to reach the desired consistency.
