Method
- Cook the Pasta. Bring a large pot of salted water to a boil.
- Add the pasta and cook according to package instructions until al dente.
- About 2 minutes before the pasta is done, add the broccoli florets to the pot.
- Reserve 120 ml of pasta cooking water, then drain the pasta and broccoli.
- Prepare the Sauce. In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer.
- Combine Ingredients. Stir in the grated cheddar and Parmesan cheeses, mixing until the cheese is melted and the sauce is smooth.
- Add the cooked pasta and broccoli to the skillet, tossing to coat in the sauce.
- If the sauce is too thick, add a bit of the reserved pasta water to reach the desired consistency.
- Season and Serve. Season with salt and freshly ground black pepper to taste
- Garnish with chopped parsley before serving.
