Ingredients
  

  • 1 kg minced lamb (80/20% meat to fat ratio)
  • 1 red onion, finely chopped
  • 5 cloves garlic, crushed
  • 2 tbsp ginger, grated
  • 4 green bird's eye chilies, finely chopped
  • 2 tbsp mint leaves, finely chopped
  • 2 tbsp coriander (cilantro), finely chopped
  • 1 tsp salt
  • 1 tbsp Kashmiri chili powder
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground black pepper
  • 1 tsp garam masala
  • 2 tbsp yogurt

For the mint chutney:

  • 1 cup fresh mint leaves
  • 1/2 cup fresh coriander leaves
  • 2-3 green chilies
  • 1 tbsp lemon juice
  • Salt to taste

Instructions
 

  • Finely chop the onion and squeeze out excess moisture using a cloth.
  • Mix all ingredients for the kebab in a large bowl. Knead well for about 5 minutes.
  • Cover and refrigerate for at least 3 hours or overnight.
  • Preheat grill to medium-high heat.
  • Wet your hands and form the meat mixture around skewers.
  • Grill for 10-15 minutes, turning occasionally, until cooked through and charred on the outside.
  • For the chutney, blend all ingredients until smooth.
  • Serve hot kebabs with mint chutney.

Notes
