Ingredients
  

  • 300 grams sharp cheddar cheese, grated
  • 200 grams Monterey Jack cheese, grated
  • 30 grams unsalted butter
  • 30 grams all-purpose flour
  • 480 ml whole milk
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 1 tablespoon adobo sauce (from the chipotle can)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and freshly ground black pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions
 

  •  Prepare the Base. In a medium saucepan, melt the butter over medium heat.
  • Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  • Make the Roux. Stir in the flour and cook for about 1 minute, stirring constantly, until the mixture is lightly golden.
  •  Add Milk. Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk until the mixture thickens, about 5-7 minutes.
  • Add Cheese and Chipotle. Reduce the heat to low and slowly add the grated cheddar and Monterey Jack cheeses, stirring until completely melted and smooth.
  • Stir in the chopped chipotle peppers, adobo sauce, and ground cumin. Season with salt and pepper to taste.
  • Serve: Transfer the queso to a serving bowl and garnish with chopped cilantro.
  • Serve warm with tortilla chips or as a topping for nachos.
