Ingredients
Method
- Prepare the Base. In a medium saucepan, melt the butter over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Make the Roux. Stir in the flour and cook for about 1 minute, stirring constantly, until the mixture is lightly golden.
- Add Milk. Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk until the mixture thickens, about 5-7 minutes.
- Add Cheese and Chipotle. Reduce the heat to low and slowly add the grated cheddar and Monterey Jack cheeses, stirring until completely melted and smooth.
- Stir in the chopped chipotle peppers, adobo sauce, and ground cumin. Season with salt and pepper to taste.
- Serve: Transfer the queso to a serving bowl and garnish with chopped cilantro.
- Serve warm with tortilla chips or as a topping for nachos.
Notes
Variations
- Add Ground Meat:
- Incorporate cooked ground beef, turkey, or chorizo into the queso for a heartier dip. Brown the meat separately, drain any excess fat, and stir it into the queso before serving.
- Vegetable Mix:
- Add sautéed vegetables such as bell peppers, jalapeños, or mushrooms for added flavor and texture. These can be sautéed with the onions and garlic.
- Black Beans:
- Stir in a can of drained and rinsed black beans for a protein-rich addition that complements the cheesy dip.
- Tomato and Corn:
- Add diced tomatoes and corn kernels (fresh, frozen, or canned) to the queso for a fresh and slightly sweet contrast to the spicy cheese.
- Different Cheeses:
- Experiment with different cheese combinations, such as adding pepper jack for extra spice or using a smoked cheese for a deeper flavor.
- Spicy Kick:
- Increase the heat by adding more chipotle peppers or incorporating diced fresh jalapeños or serrano peppers.
- Creamy Avocado:
- Top the queso with diced avocado or a dollop of guacamole for a creamy and cool contrast to the spicy dip.
- Herb Infusion:
- Mix in fresh herbs like cilantro or green onions to add a burst of freshness to the queso.
- Beer Cheese Queso:
- Replace some of the milk with a light beer to add a subtle malty flavor that pairs well with the cheese.
- Lime Zest:
- Add a touch of lime zest to the queso for a bright, citrusy note that enhances the overall flavor.
