  • 480 grams Ricotta cheese (whole milk or part skim)
  • 115 Grams Grated mozzarella cheese
  • 50 Grams Grated parmesan cheese
  • 2 Grams Italian seasoning blend
  • 3 Grams kosher salt

Method
 

  1. Preparing the Cheese Filling
  2. 480g ricotta cheese
  3. 3g kosher salt
  4. Combine ingredients:
  5. In a medium bowl, add all the cheeses, Italian seasoning, and salt.
  6. Using a rubber spatula, mix thoroughly.
  7. Ensure to scrape the bottom and sides of the bowl for even incorporation
  8. Usage options: For immediate use: Spoon the filling into cooked manicotti shells or jumbo shells. Alternatively, use as a layer in lasagna.
  9.  For later use: Cover the bowl containing the filling. Store in the refrigerator. Can be kept for up to 5 days.
