Ingredients
  

  • Brownie Layer: 150 grams unsalted butter
  • 200 grams dark chocolate (70% cocoa), chopped
  • 150 grams granulated sugar
  • 100 grams brown sugar
  • 3 large eggs (approximately 180 grams)
  • 1 teaspoon vanilla extract
  • 100 grams all-purpose flour
  • 30 grams cocoa powder
  • 1/2 teaspoon salt
  • Cheese Layer: 250 grams cream cheese, softened
  • 50 grams granulated sugar
  • 1 large egg (approximately 60 grams)
  • 1 teaspoon vanilla extract

Method
 

  1. Prepare the Brownie Layer: Preheat your oven to 180°C (350°F). Line a 9×9-inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a heatproof bowl, melt the butter and dark chocolate together over a pot of simmering water or in the microwave in short bursts, stirring frequently until smooth.
  3. In a large bowl, whisk together the granulated sugar, brown sugar, eggs, and vanilla extract until thick and pale.
  4. Add the melted chocolate mixture to the egg mixture and whisk until well combined.
  5. Sift in the flour, cocoa powder, and salt, and fold gently until just combined. Be careful not to overmix.
  6. Pour the brownie batter into the prepared baking pan and spread evenly.
  7. Prepare the Cheese Layer: In a medium bowl, beat the cream cheese with the granulated sugar until smooth and creamy.
  8. Add the egg and vanilla extract, and beat until fully incorporated.

  12.  Serve: Use the parchment paper overhang to lift the brownies out of the pan. Cut into squares and serve.
