This Indian Desi Pub Tandoori Chicken Wings recipe combines tender chicken wings with a flavorful marinade of yogurt and traditional Indian spices. Ingredients
- 1 kg chicken wings, tips removed and split at the joint
- 2 tbsp vegetable oil
For the marinade:
- 1 cup plain yogurt
- 2 tbsp lemon juice
- 2 tbsp ginger-garlic paste
- 2 tsp Kashmiri red chili powder
- 1 tsp turmeric powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp garam masala
- 1 tsp dried fenugreek leaves (kasuri methi)
- 1 tsp salt
- 1/4 tsp black pepper
- 2 tbsp mustard oil
For basting:
- 2 tbsp melted ghee or butter
- 1 tsp chaat masala
Instructions
- In a large bowl, mix all marinade ingredients together until well combined.
- Add chicken wings to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 4 hours or overnight for best results.
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with aluminum foil and place a wire rack on top. Brush the rack with vegetable oil to prevent sticking.
- Remove chicken wings from the marinade, shaking off excess. Arrange wings on the prepared rack, leaving space between each piece.
- Bake for 20 minutes, then flip the wings and bake for another 10 minutes.
- While the wings are cooking, mix melted ghee or butter with chaat masala for basting.
- After 30 minutes of total cooking time, brush the wings with the ghee mixture and switch the oven to broil (grill) mode.
