This Indian Desi Pub Tandoori Chicken Wings recipe combines tender chicken wings with a flavorful marinade of yogurt and traditional Indian spices. Ingredients
  

  • 1 kg chicken wings, tips removed and split at the joint
  • 2 tbsp vegetable oil

For the marinade:

  • 1 cup plain yogurt
  • 2 tbsp lemon juice
  • 2 tbsp ginger-garlic paste
  • 2 tsp Kashmiri red chili powder
  • 1 tsp turmeric powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1 tsp dried fenugreek leaves (kasuri methi)
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp mustard oil

For basting:

  • 2 tbsp melted ghee or butter
  • 1 tsp chaat masala

Instructions
 

  • In a large bowl, mix all marinade ingredients together until well combined.
  • Add chicken wings to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 4 hours or overnight for best results.
  • Preheat your oven to 425°F (220°C).
  • Line a baking sheet with aluminum foil and place a wire rack on top. Brush the rack with vegetable oil to prevent sticking.
  • Remove chicken wings from the marinade, shaking off excess. Arrange wings on the prepared rack, leaving space between each piece.
  • Bake for 20 minutes, then flip the wings and bake for another 10 minutes.
  • While the wings are cooking, mix melted ghee or butter with chaat masala for basting.
  • After 30 minutes of total cooking time, brush the wings with the ghee mixture and switch the oven to broil (grill) mode.
  • Broil for 2-3 minutes, watching carefully to prevent burning, until the wings are charred in spots and crispy.
  • Remove from the oven and let rest for 5 minutes before serving.
  • Serve hot with mint chutney or raita.
