  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

Prepare the Macaron Shells

  • Sift the Dry Ingredients:: Sift the powdered sugar and almond flour together into a bowl. Discard any large bits.
  • Whip the Egg Whites:: In a clean mixing bowl, whisk the egg whites, cream of tartar, and salt until foamy.
  • Gradually add the granulated sugar while continuing to whisk until stiff peaks form.
  • Add the white vinegar and food coloring, and gently fold in until evenly distributed.

Combine and Pipe:

  • Transfer the batter to a piping bag fitted with a round tip.

  • Tap the baking sheet on the counter to release air bubbles. Let the macarons rest for 30-60 minutes until a skin forms on the surface.

Bake:

  • Preheat the oven to 150°C (300°F).
  • Bake the macarons for 14-16 minutes. They should not wobble when touched.
  • Allow them to cool completely on the baking sheet.

Prepare the Cheese Filling

  • Mix the Filling: :In a medium bowl, beat the cream cheese and butter together until smooth.
  • Add the grated cheddar and parmesan cheeses, Dijon mustard, and garlic powder. Mix until well combined.
  • Season with salt and pepper to taste.

Assemble the Macarons:

  • Pair the cooled macaron shells by size.
  • Pipe a dollop of cheese filling onto one shell and sandwich with another shell.
  • Repeat until all macarons are filled.
