Ingredients
  

  • For the pizza dough (if making homemade):
  • 500g all-purpose flour
  • 300ml warm water
  • 15ml olive oil
  • 7g active dry yeast
  • 5g salt
For the pizza:
  • 1 pizza dough (homemade or store-bought, about 450g)
  • 30ml olive oil
  • 15g minced garlic (about 4-5 cloves)
  • 300g frozen spinach, thawed and drained
  • 200g feta cheese, crumbled
  • 200g low-moisture mozzarella cheese, shredded
  • 50g red onion, thinly sliced
  • 50g sun-dried tomatoes, chopped
  • 2g red pepper flakes
  • 15g pine nuts (optional)
  • 10ml honey (optional, for drizzling)
  • Mediterranean Herb Blend

Method
 

  1. If making homemade dough, mix flour, warm water, olive oil, yeast, and salt. Knead briefly, then let rise in a covered bowl for about an hour.
  2. Preheat your oven to 220°C (425°F). If using a pizza stone, place it in the oven while preheating.
  3. Divide the dough in half. On a floured surface, stretch or roll each half into a 25cm (10-inch) round.
  4. In a small bowl, mix 15ml olive oil with minced garlic.
  5. Brush each pizza base with the garlic oil mixture.
  6. Squeeze any excess moisture from the thawed spinach and distribute it evenly over both pizzas.
  7. Sprinkle mozzarella cheese over the spinach.
  8. Add crumbled feta cheese, sliced red onions, and chopped sun-dried tomatoes.
  9. Sprinkle red pepper flakes over the pizzas.
  10. If using, add pine nuts.
  11. Drizzle the remaining olive oil over the pizzas.
  12. Sprinkle a blend of dried Mediterranean herbs (oregano, thyme, rosemary) over the pizza before baking.
  13. Bake for 15-20 minutes, or until the crust is golden and the cheese is melted and bubbly.
  14. If desired, drizzle with honey before serving.
