Method
- Preheat oven to 425°F (218°C) fan setting.
- Wash and dice sweet potatoes into 2cm cubes.

- Toss sweet potato cubes in the marinade until evenly coated.
- Spread on a parchment-lined baking sheet in a single layer.
- Roast for 25 minutes, flip potatoes, then roast another 15-20 minutes until golden and tender.
- Sprinkle with sesame seeds and scallions before serving.

1. Sweet Potato Tempura
- Additions: Coat sweet potato slices in tempura batter.
- Instructions: Dip sliced sweet potatoes in a simple tempura batter (flour, water, and baking soda) and deep-fry until golden and crispy.
