Indian Pub Yogurt and Mint Sauce (green sauce)

This Indian Pub Green Sauce recipe is a fresh blend of mint, greek yogurt and lemon juice, creating the perfect condiment for pairing with Indian pub favourites. Whether served as a dip or used as a marinade, this zesty green sauce adds a burst of flavour to your favourite appetizers and grilled dishes.

Ingredients
  

  • 1 cup plain full-fat Greek yogurt
  • 1/2 cup fresh mint leaves, finely chopped
  • 2 tablespoons lemon juice, freshly squeezed
  • 2 garlic cloves, minced or pressed through a garlic press
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/8 teaspoon black pepper
  • 1 tablespoon extra virgin olive oil (optional)

Method
 

  1. In a medium mixing bowl, add the Greek yogurt.
  2. Wash and pat dry the fresh mint leaves. Remove the leaves from the stems and chop them very finely.
  3. Add the finely chopped mint leaves to the yogurt.
  4. Squeeze fresh lemon juice and add it to the bowl.
  5. Peel and mince the garlic cloves or press them through a garlic press. Add the minced garlic to the mixture.
  6. Add kosher salt and black pepper to the bowl.
  7. If using, add the extra virgin olive oil for a smoother consistency and richer flavor.
  8. Whisk all ingredients together until fully combined and smooth.
  9. Taste the sauce and adjust seasoning if necessary, adding more salt, pepper, or lemon juice to your preference.
  10. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  11. Before serving, give the sauce a quick stir.
  12. Serve chilled as a condiment for kebabs, grilled meats, or as a dip for naan bread or vegetables.
