Mix the Coatings: In a small bowl, whisk together 60ml of water and 2 large beaten eggs.
In a medium bowl, combine 180g of Italian seasoned bread crumbs with 2.5g of garlic salt.
In a third bowl, blend 80g of all-purpose flour with 40g of cornstarch
Heat the Oil: In a large, heavy saucepan, heat oil to 365°F (185°C).
Coat the Cheese Sticks: Take a mozzarella stick and dredge it in the flour mixture, shaking off any excess. Dip the floured cheese stick into the egg mixture, allowing any excess egg to drip back into the bowl.
Press the cheese stick into the bread crumb mixture, ensuring it is fully coated.
Place the breaded mozzarella stick on a plate or wire rack.
Repeat this process with the remaining mozzarella sticks.
Fry the Cheese Sticks: Using a spider spoon or tongs, carefully lower 3 to 4 breaded mozzarella sticks into the hot oil.
Fry until golden brown, about 30 seconds.
Remove the cheese sticks from the oil and drain them on paper towels.
Repeat the frying process with the remaining mozzarella sticks.
Serve the mozzarella sticks hot and enjoy with your favorite dipping sauce, such as marinara or a sweet chilli sauce
