Method
- Cook the Bacon: In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and drain on paper towels. Reserve 1 tablespoon of bacon drippings in the pan.
- Prepare the Bread: Spread mayonnaise on the outside of each slice of sourdough bread. This will help achieve a golden, crispy crust.
- Assemble the Sandwiches: Divide the grated cheddar and pepper jack cheeses evenly over 4 slices of bread.
- Add 3 slices of cooked bacon on top of the cheese for each sandwich.
- Top with the remaining slices of bread, mayonnaise side out.
- Grill the Sandwiches: Heat the reserved bacon drippings in the skillet over low heat.
- Place the sandwiches in the skillet and cook until golden brown on one side, about 4-5 minutes.
- Flip the sandwiches and add a small amount of butter to the skillet. Cook until the other side is golden brown and the cheese is melted.
- Serve: Remove the sandwiches from the skillet and let them cool slightly before slicing.
- Serve warm and enjoy the gooey cheese and crispy bacon.
