Homemade bacon and cheese grills

This recipe for homemade bacon and cheese grills combines crispy bacon, melted cheese, and perfectly toasted bread for a delicious and satisfying meal. It's perfect for breakfast, lunch, or a comforting snack.

Ingredients
  

  • 8 slices of sourdough bread (about 400 grams)
  • 60 grams mayonnaise
  • 200 grams bacon (about 12 slices)
  • 100 grams cheddar cheese, grated
  • 100 grams pepper jack cheese, grated
  • 30 grams butter

Method
 

  1. Cook the Bacon: In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and drain on paper towels. Reserve 1 tablespoon of bacon drippings in the pan.
  2. Prepare the Bread: Spread mayonnaise on the outside of each slice of sourdough bread. This will help achieve a golden, crispy crust.
  3. Assemble the Sandwiches: Divide the grated cheddar and pepper jack cheeses evenly over 4 slices of bread.
  4. Add 3 slices of cooked bacon on top of the cheese for each sandwich.
  5. Top with the remaining slices of bread, mayonnaise side out.
  6.  Grill the Sandwiches: Heat the reserved bacon drippings in the skillet over low heat.
  7. Place the sandwiches in the skillet and cook until golden brown on one side, about 4-5 minutes.
  8. Flip the sandwiches and add a small amount of butter to the skillet. Cook until the other side is golden brown and the cheese is melted.
  9. Serve: Remove the sandwiches from the skillet and let them cool slightly before slicing.
  10. Serve warm and enjoy the gooey cheese and crispy bacon.

    • Experiment with different cheeses such as Monterey JackBrie, or Gruyère for a unique flavor profile. Mixing cheeses can enhance the creaminess and taste.

    • Spread a thin layer of Dijon mustard on the inside of the bread before adding the cheese and bacon for an extra layer of flavor.
