Feta cheese muffins recipe

These savory feta cheese muffins are perfect for breakfast or as a snack. They are packed with Mediterranean flavors and have a delightful texture.

Ingredients
  

  • 175 grams plain flour
  • 50 grams wholewheat flour
  • 2.5 teaspoons baking powder
  • 1 teaspoon fine salt
  • 275 ml whole milk
  • 1 medium egg
  • 100 grams cottage cheese
  • 75 grams unsalted butter, melted and cooled
  • 50 grams feta cheese, crumbled
  • 0.5 teaspoon wholegrain mustard
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon ground black pepper
  • 8 sundried tomatoes, chopped
  • 25 grams pumpkin seeds

Method
 

  1.  Preheat the Oven: Preheat your oven to 200°C (392°F) or 180°C (356°F) for fan ovens. Line a 12-hole muffin tin with paper cases.
  2. Mix Dry Ingredients: In a large bowl, combine the plain flour, wholewheat flour, baking powder, and salt. Stir everything together until well mixed.
  3. Prepare Wet Ingredients: In another bowl, whisk together the whole milk, egg, cottage cheese, melted butter, feta cheese, mustard, dill, and black pepper until well combined.
  4. Combine Ingredients: Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Be careful not to overmix.
  5. Add Toppings: Spoon the batter into the prepared muffin cases, filling each about three-quarters full.
  6. Top each muffin with a little chopped sundried tomato and sprinkle with pumpkin seeds.
  7. Bake: Bake in the preheated oven for 20-25 minutes, or until a skewer inserted into the center of a muffin comes out clean.
  8.  Cool and Serve: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  9. Serve warm or at room temperature.
