Ingredients
  

For the crust:
  • 200g all-purpose flour
  • 100g cold unsalted butter, cubed
  • 50g powdered sugar
  • 1 large egg yolk
  • 2g salt
  • 15ml ice water
For the filling:
  • 300g fresh blueberries
  • 200g soft goat cheese
  • 100g crème fraîche
  • 50g honey
  • Zest of 1 lemon
  • 2 large eggs
For the rosemary-honey drizzle:
  • 50g honey
  • 5g fresh rosemary leaves
  • 15ml lemon juice

Method
 

  1. Preheat the oven to 180°C (350°F).
For the crust:
  1. In a food processor, pulse flour, butter, powdered sugar, and salt until it resembles coarse crumbs.
  2. Add egg yolk and ice water, pulse until the dough comes together.
  3. Press the dough into a 23cm (9-inch) tart pan with a removable bottom.
  4. Chill for 30 minutes in the refrigerator.
Blind bake the crust:
  1. Line the chilled crust with parchment paper and fill with pie weights or dried beans.
  2. Bake for 15 minutes, then remove weights and parchment.
  3. Bake for an additional 5-7 minutes until lightly golden.
  4. Let cool while preparing the filling.
For the filling:
  1. In a bowl, whisk together goat cheese, crème fraîche, honey, lemon zest, and eggs until smooth.
Assemble the tart:
  1. Pour the goat cheese mixture into the cooled crust.
  2. Gently place blueberries on top, pressing them slightly into the filling.
Bake the tart:
  1. Place in the oven and bake for 25-30 minutes, or until the filling is set but still slightly jiggly in the center.
  2. Let cool completely on a wire rack.
For the rosemary-honey drizzle:
  1. In a small saucepan, combine honey and rosemary leaves.
  2. Heat gently over low heat for 5 minutes to infuse the flavors.
  3. Remove from heat, strain out rosemary leaves, and stir in lemon juice.
  4. Let cool slightly.
To serve:
  1. Drizzle the rosemary-honey over the cooled tart just before serving.
