Ingredients
  

  • 226g block quality feta, drained
  • 180g Greek yogurt
  • Zest of 1 lemon (approximately 5-6g)
  • 30g extra virgin olive oil, more as needed
  • 2g Aleppo pepper, or red pepper flakes (to your taste)
  • 6g chopped fresh mint
  • 15-20g toasted pine nuts, optional
  • 10-15g crushed pistachios, optional

Method
 

Whipped Feta Preparation
  1. Combine Ingredients: In a large food processor fitted with a blade, add 226g of drained feta, 180g of Greek yogurt, and the zest of 1 lemon.
  2. Blend and Add Olive Oil: Blend the mixture until combined. While the processor is running, slowly drizzle in 30g of extra virgin olive oil through the top opening.
  3. Transfer and Garnish: Transfer the whipped feta to a servingbowl.
  4. Using the back of a spoon, smooth the top of the feta and create an indentation or "well" in the center.
  5. Drizzle a bit more olive oil over the top.
  6. Sprinkle with 2g of Aleppo pepper (or red pepper flakes), 6g of chopped fresh mint, 6g of chopped fresh parsley, and optionally, 15-20g of toasted pine nuts and 10-15g of crushed pistachios.
  7. Serve:Serve the whipped feta with warm pita chips or warm pita wedges.
