Whipped Feta Preparation
- Combine Ingredients: In a large food processor fitted with a blade, add 226g of drained feta, 180g of Greek yogurt, and the zest of 1 lemon.
- Blend and Add Olive Oil: Blend the mixture until combined. While the processor is running, slowly drizzle in 30g of extra virgin olive oil through the top opening.
- Transfer and Garnish: Transfer the whipped feta to a servingbowl.
- Using the back of a spoon, smooth the top of the feta and create an indentation or "well" in the center.
- Drizzle a bit more olive oil over the top.
- Sprinkle with 2g of Aleppo pepper (or red pepper flakes), 6g of chopped fresh mint, 6g of chopped fresh parsley, and optionally, 15-20g of toasted pine nuts and 10-15g of crushed pistachios.
- Serve:Serve the whipped feta with warm pita chips or warm pita wedges.
