Ingredients
Method
- Heat olive oil in a large pot over medium heat. Add chicken pieces and cook until golden brown, about 5-7 minutes. Remove chicken and set aside.
- In the same pot, melt butter. Add onions, carrots, and celery. Cook until softened, about 5 minutes.
- Add garlic, thyme, and rosemary. Cook for another minute until fragrant.
- Sprinkle flour over the vegetables and stir to coat. Cook for 1-2 minutes to remove the raw flour taste.
- Slowly pour in the chicken stock, stirring constantly to prevent lumps. Bring to a simmer.
- Add the browned chicken back to the pot. Simmer for 15 minutes, stirring occasionally.
- Add gnocchi to the soup and cook for 3-4 minutes until they float to the surface.
- Stir in heavy cream, lemon zest, and lemon juice. Simmer for another 5 minutes.
- Add chopped kale and cook until wilted, about 3-4 minutes.
- Stir in grated Parmesan cheese until melted.
- Season with salt and pepper to taste.
- Serve hot, garnished with additional Parmesan and fresh thyme if desired.
