Slice hoagie rolls 3/4 of the way through with a serrated knife Dice Onions
Thinly slice beef
In a small bowl, stir together 2 Tbsp softened butter with 1 pressed garlic clove
Spread garlic butter onto the cut sides of 4 hoagie roll
Toast the rolls on skillet or flattop until golden brown
Add 1 Tbsp oil to your frying pan and saute diced onions, on medium heat until caramelized then set aside
Turn the heat to high and add 1 tablespoon of oil. Arrange the thinly sliced steak in an even layer. Allow it to brown undisturbed for a couple of minutes, then flip and season with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Sauté until the steak is fully cooked, then stir in the caramelized onions.
Divide the mixture into four equal portions and top each with two slices of provolone cheese. Turn off the heat to allow the cheese to melt without overcooking the meat. Spread a thin layer of mayo on the toasted side of each roll. For each portion, place a toasted bun on top, then use a spatula to scoop the cheesy beef into the bun as you flip it over. Serve warm.
