Ingredients
  

  • 450 grams ground beef (80/20)
  • 225 grams ground pork
  • 100 grams grated Parmesan cheese
  • 120 grams shredded mozzarella cheese
  • 60 grams almond flour
  • 1 large egg (approximately 50 grams)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black peppe
  • 240 ml low-carb marinara sauce (ensure no added sugar)

Method
 

  1. Prepare the Meatball Mixture: Preheat your oven to 190°C (375°F).
  2. In a large mixing bowl, combine the ground beef, ground pork, Parmesan cheese, almond flour, egg, parsley, garlic powder, onion powder, salt, and black pepper. Mix until just combined. Be careful not to overmix, as this can make the meatballs tough.
  3. Form the Meatballs: Divide the mixture into approximately 20 equal portions. Roll each portion into a ball and press a small amount of shredded mozzarella cheese into the center, then seal the meat around it.
  4. Bake the Meatballs: Place the meatballs on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown.
  6. Add the Marinara Sauce: While the meatballs are baking, heat the marinara sauce in a saucepan over low heat.
  7. Once the meatballs are done, transfer them to a serving dish and pour the warm marinara sauce over them.
  8. Serve:Serve the meatballs hot, garnished with additional parsley if desired. They pair well with zucchini noodles or a fresh salad for a complete low-carb meal.
