Indian desi Pub Tadka Daal is a comforting, protein-packed dish featuring lentils cooked to perfection and infused with a smoky blend of cumin, garlic, and other spices. Ingredients
  

For the dal:
  • 1 cup toor dal (split pigeon peas)
  • 3 cups water
  • 1/2 tsp turmeric powder
  • 1 tsp salt
For the base:
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 1 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
For the tadka (tempering):
  • 2 tbsp ghee or oil
  • 2 cloves garlic, minced
  • 1 dried red chili
  • 1/4 tsp asafoetida (hing)
  • 1/2 tsp cumin seeds
  • 1 tsp Kashmiri red chili powder
For garnish:
  • Fresh cilantro, chopped
  • Lemon wedges

Method
 

  1. Wash the dal and cook it with water, turmeric, and salt in a pressure cooker for about 4 whistles or until soft.
  2. In a pan, heat oil and add cumin seeds. When they sizzle, add onions and sauté until golden.
  3. Add ginger-garlic paste and cook for a minute.
  4. Add tomatoes and all the spices. Cook until tomatoes are soft and oil separates.
  5. Add the cooked dal and simmer for 10 minutes.
  6. For the tadka, heat ghee in a small pan. Add garlic, dried red chili, asafoetida, and cumin seeds. When they sizzle, add Kashmiri red chili powder and immediately pour over the dal.
  7. Garnish with cilantro and serve with lemon wedges.

Notes
