Ingredients
  

  • For the Crust: 100 grams pitted dates
  • 100 grams cashews
  • 1/8 teaspoon salt
  • For the Cheesecake Filling: 200 grams reduced-fat cream cheese, softened
  • 250 grams plain Greek yogurt (non-fat)
  • 80 ml maple syrup or honey
  • 2 tablespoons lemon juice
  • 1 tablespoon vanilla extract
  • 1/8 teaspoon salt
  • Optional Toppings: Fresh berries (strawberries, blueberries, raspberries)
  • Lemon or lime zest

Method
 

  1. Prepare the Crust: In a food processor, combine the dates, cashews, and salt. Process until the mixture forms a loose ball. If the dates are dry, add a tablespoon of warm water and process again until the mixture comes together.
  2. Press about a tablespoon of the crust mixture into the bottom of each serving jar or cup (approximately 6 jars).
  3. Prepare the Cheesecake Filling: In a clean food processor, blend the cream cheese, Greek yogurt, maple syrup or honey, lemon juice, vanilla extract, and salt until smooth and creamy.
  4. Spoon the cheesecake filling evenly into the jars over the crust. Smooth the top with a spoon.
  5. Chill: Cover the jars and refrigerate for at least 2 hours to allow the cheesecake to set.
  6. Serve: Before serving, top with fresh berries and a sprinkle of lemon or lime zest if desired.
