  • 500 grams fromage blanc (0% fat or your preferred fat content)
  • 75 grams granulated sugar
  • 90 grams all-purpose flour
  • 1 teaspoon baking powder
  • Zest of 1 lemon
  • Butter, for greasing the pan

Method
 

  1. Preheat the Oven
  2. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan with butter.
Prepare the Batter
  1. In a large mixing bowl, beat the eggs and sugar together until the mixture becomes pale and fluffy.
  2. Add the fromage blanc and lemon zest to the egg mixture and mix until well combined.
  3. Sift the flour and baking powder together, then gradually fold them into the wet mixture until smooth and homogeneous.
Bake
  1. Pour the batter into the prepared springform pan.
  2. Bake in the preheated oven for about 50-60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
