Method
- In a small bowl, steep the Earl Grey tea bags in 100ml of boiling water for 5 minutes. Remove the tea bags and set the concentrated tea aside.
- Clean and sort the blackberries, removing any stems or debris.
- In a large, heavy-bottomed pot, combine the blackberries, sugar, lemon juice, and the Earl Grey tea concentrate. Stir to combine.
- Split the vanilla bean lengthwise and scrape out the seeds. Add both the seeds and the pod to the pot.
- Heat the mixture over medium-high heat, stirring frequently until the sugar dissolves completely.
- Bring the mixture to a rolling boil, then reduce heat to medium-low and simmer for 20 minutes, stirring occasionally to prevent sticking.
- After 20 minutes, add the bourbon and pectin. Stir well to incorporate.
- Increase heat to medium-high and bring the jam back to a rolling boil. Cook for an additional 5 minutes, stirring constantly.
- To test for doneness, place a small amount of jam on a chilled plate. If it sets and wrinkles when pushed with a finger, it's ready. If not, continue cooking for 2-3 minute intervals, testing after each.
- Once the jam has reached the desired consistency, remove from heat and skim off any foam.
- Remove the vanilla bean pod.
- Carefully ladle the hot jam into sterilized jars, leaving 1/4 inch headspace.
- Wipe the rims clean, apply lids and bands, and process in a boiling water bath for 10 minutes.
- Remove jars and allow to cool completely before storing.
