Cheese Muffins

These cheese muffins are a savory delight, packed with rich flavors from cheddar and mozzarella. Perfect for breakfast, a snack, or alongside a meal, they are sure to satisfy any cheese lover.

Ingredients
  

  • 83 grams unsalted butter, cubed and softened
  • 292 grams plain flour, sifted
  • 3 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 1/4 teaspoons smoked paprika (or mustard powder)
  • 3 medium-large eggs
  • 180 ml milk
  • 100 grams extra mature cheddar cheese, cut into small cubes
  • 76 grams mozzarella cheese, cut into small cubes
  • Pinch of pepper
  • Pinch of garlic powder

Method
 

  1. Prepare the Oven and Muffin Tray Preheat the Oven: Preheat your oven to 190°C (170°C fan) or 365°F (Gas Mark 5).
  2. Prepare the Muffin Tray: Line a 12-hole cupcake tray with paper muffin cases.
  3. Mix the Dry Ingredients Combine Dry Ingredients: In a large bowl, sieve together the plain flour, baking powder, salt, and smoked paprika (or mustard powder).
  4. Mix well to combine.
  5.  Mix the Wet Ingredients Combine Wet Ingredients: In another bowl, beat together the softened butter, eggs, and milk until well combined and foamy.
  6. Combine and Fold Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix to avoid dense muffins.
  7. Fold in the Cheese: Gently fold in the cheddar and mozzarella cubes, along with a pinch of pepper and garlic powder.
  8. Fill and Bake Fill the Muffin Cases: Evenly distribute the batter among the prepared muffin cases, filling each about two-thirds full.
  9. Bake: Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  10. Cool and Serve Cool : Allow the muffins to cool in the tray for a few minutes before transferring them to a wire rack to cool completely.
  11. Serve: Enjoy warm or at room temperature. These muffins are perfect for any time of the day!
