Prepare the Cheddar Pie Crust:
- In a large bowl, whisk together the flour, sugar, and salt.
- Add the chilled, cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Stir in the grated cheddar cheese.
- Gradually add the ice water, mixing with a fork until the dough begins to come together. Add more water if necessary.
- Divide the dough into two equal portions, shape into disks, wrap in plastic wrap, and refrigerate for at least 2 hours.
Prepare the Apple Pie Filling:
- In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, allspice, cloves, nutmeg, and grated cheddar cheese. Toss until the apples are evenly coated.
Assemble the Pie:
- Preheat your oven to 220°C (425°F).
- On a floured surface, roll out one disk of dough to fit a 23-cm pie dish. Transfer the dough to the dish, pressing it gently into place.
- Fill the crust with the apple mixture, mounding it slightly in the center.
- Roll out the second disk of dough and place it over the apples. Trim any excess dough, tuck the edges under, and crimp to seal.
- Cut slits in the top crust to allow steam to escape.
- Brush the top crust with the egg wash and sprinkle with coarse sugar if desired.
Bake the Pie:
- Place the pie on a baking sheet to catch any drips.
- Bake in the preheated oven for 20 minutes, then reduce the temperature to 175°C (350°F) and continue baking for 35-45 minutes, or until the crust is golden brown and the filling is bubbling.
- If the crust browns too quickly, cover the edges with foil.
- Cool and Serve: Allow the pie to cool to room temperature before serving
- Serve with additional slices of cheddar cheese if desired.
